The coffee comes from the El Diviso farm, run by producer Nestor Lasso – a name that resonates not only in Colombia but also on the international scene. This particular lot was created in collaboration with his brother Adrian and their El Diviso Collective, which brings together several small producers in the Huila region. The Sidra variety is a rarity – it was created in Ecuador by crossing Bourbon and Typica, but it is only in the hands of talented farmers like Nestor that it reaches its full potential. The result is a coffee with an incredibly clean, expressive flavor profile.

The explosion of flavors is also due to the precise processing. The coffee was fermented aerobically and anaerobically for a total of 140 hours, then washed and dried for 12–15 days on African beds. This multi-stage process allowed the natural sweetness and complexity to develop, making this Sidra a real gem.
