Blow your senses sky high with this Colombian coffee from Foundation Coffee, which is perfect for lovers of bold and unexpected flavors. Since the coffee cherries were fermented together with sakura blossoms, the resulting cup welcomes you with the lively freshness of pink lemonade, which is immediately followed by the exotic sweetness of lychee. And just when you think nothing else can surprise you, delicate bubbles reminiscent of champagne appear. This combination is simply refreshing, complex, and incredibly fruity.
Finca Milán, located in the Colombian town of Pereira in the province of Risaralda near Los Nevados National Park, is owned by Julio Cesar Madrid, who has been running the farm since 1982. Finca Milán, which is part of the Café UBA alliance, covers 60 hectares of loamy-clay soils at an altitude of 1,400 to 1,800 meters above sea level. The farm benefits from an ideal climate that supports the cultivation of crops such as bananas, corn, and beans, as well as various coffee varieties such as Colombia, Castillo, and Pink Bourbon. The modern processing station allows for the use of innovative methods, including natural, honey, and double fermentation. Influenced by his daughter's research into microbial starter cultures in coffee fermentation, Julio has improved the processing methods on the farm, resulting in a unique flavor profile.
The innovative processing method used for these beans involves fermenting ripe coffee cherries together with sakura (cherry blossom) flowers, which give the coffee a delicate floral aroma and enhance its sweetness and complexity. After co-fermentation, the coffee is naturally dried, preserving both the fruity character and the floral nuances that the sakura flowers bring to the coffee. The result is a cup that is both distinctive and elegant - a true showcase of modern Colombian innovation in processing.
