Behind this coffee is Colombian producer Marlon Rojas and his Tres Cielos project. Marlon is the third generation of his family to grow coffee, and today he focuses primarily on working with less common varieties and specialty lots. Tres Cielos is located in the Huila region, one of Colombia’s most important coffee-growing areas. The Wush Wush variety itself is also quite interesting. It originates from Ethiopia, from the region of the same name, but is now also grown in Colombia. It has gained attention among specialty coffee producers primarily due to its distinctive flavor profile.
This lot was processed at the Tres Cielos station, where the coffee underwent the washed process. In this process, the coffee cherries are first stripped of their skin and pulp, and the beans are then fermented to remove any remaining pulp. They are then washed with clean water and left to dry until they reach the desired moisture content. The washed processing helps preserve a clean and distinct flavor profile, allowing the characteristics of the Wush Wush variety and its fruity notes to fully shine in the cup.
