Illegal Beans presents a new specialty coffee that will captivate you with its sweetness and juiciness – Colombia Las Perlitas. Your cup will be greeted by a fruity explosion of hibiscus and passion fruit, beautifully complemented by the delicate sweetness of floral honey. This profile is light, clean, and yet distinctive enough to refresh you during the day and delight you when savored slowly in the morning. Thanks to its freshness and balance, it will be enjoyed by those who like filtered coffees full of fruity and floral tones with a pleasant sweetness in the aftertaste.

The Las Perlitas project connects small farmers from the Colombian regions of Huila, Nariño, and Antioquia. Each of them supplies only a few bags from their harvest, which would be difficult to find their way across borders on their own. However, combining these micro-lots creates a unique blend that carries the character of each region while offering an exceptional flavor profile. This lot is made exclusively from thePinkBourbon variety, prized for its juiciness and delicate floral notes. The coffee grows at an altitude of 1,600–2,000 meters above sea level, where the combination of climate, soil, and the careful work of the farmers gives rise to an exceptionally balanced flavor.

The coffee is washed, which highlights its purity and clarity. After being hand-picked, the cherries are sorted, pulped, and fermented for 36–72 hours in water, giving them a delicate freshness and citrus notes. This is followed by drying on raised beds for two weeks, allowing the delicate fruity and floral notes to fully develop. The result is an elegant and juicy coffee that really shines when brewed on a filter, such as a V60 or Chemex.
