The Las Perlitas project connects small farmers from the Colombian regions of Huila, Nariño, and Antioquia. Each of them supplies only a few bags from their harvest, which would be difficult to find their way across the border on their own. However, combining these micro-lots creates a unique blend that carries the character of each region while offering an exceptional flavor profile. This lot is made exclusively from thePinkBourbon variety, prized for its juiciness and delicate floral notes. The coffee grows at an altitude of 1600-2000 meters above sea level, where the combination of climate, soil, and the careful work of farmers gives rise to an exceptionally balanced flavor.
The coffee is processed using the washed method, which emphasizes its purity and clarity. After being hand-picked, the cherries are sorted, hulled, and fermented for 36–72 hours in water, giving them a delicate freshness and citrus notes. This is followed by two weeks of drying on raised beds, which allows the delicate fruity and floral tones to fully develop. The result is an elegant and juicy coffee that stands out perfectly when brewed with a filter, such as a V60 or Chemex.
