Finca Las Flores, located in the Acevedo area of the Huila region, is a captivating project by the Vergara family that began back in 1990. We chose this lot primarily because of the fascinating story of Jhoan Vergara, who transformed the farm into a modern laboratory of coffee innovation. The coffee trees here grow at an altitude of 1,750 meters above sea level in a unique microclimate that is exceptionally well-suited to the Bourbon Sidra variety. In 2019, Jhoan won the prestigious Master of Coffee competition, definitively placing the farm on the world map of top-tier coffee. The cultivation of exotic varieties here is carried out with the utmost respect for tradition, yet utilizing the latest scientific knowledge, making every bean a small piece of coffee history.
What gives this coffee its breathtaking clarity and intense aroma is an extremely demanding and precisely controlled dry process. It all begins with a 12-hour initial oxidation of the cherries, followed by a 48-hour fermentation submerged in water in a controlled environment. A truly unique technological feature here is the use of a thermal shock at 50 °C, which serves to immediately stabilize the fermentation processes and “lock” the volatile aromatic compounds inside the bean. After the second phase of oxidation, the coffee is dried using a combination of methods: first in a mechanical dryer and then for 15 days on shaded beds until it reaches the ideal moisture content of 10.4%.
