Colombia Las Flores is a filter coffee from Coffeein that tastes like modern Colombia in a cup. The aroma welcomes you with an intense sweet floral aroma, while the taste is dominated by tropical fruit complemented by the subtle spiciness of flowers and spices. Gradually, notes of mint and lemon balm appear, and the aftertaste adds a light caramelized bitterness reminiscent of the edge of a well-toasted dessert. The coffee has a medium-full, rather tea-like body and a fresh but pleasantly rounded acidity, making it ideal for everyday filtering at home or in a café.

The Chiroso beans come from the Finca Las Flores family farm in the Huila region of Colombia, where coffee trees grow in volcanic soil at an altitude of around 1,800 meters above sea level. The farm was founded more than thirty years ago by Edilberto Vergara and Nubia Ayure, who gradually built it into a solid family base. After Nubia's death, her sons Johan and Diego took over the management and moved the farm into the world of specialty coffee – they began planting varieties such as Pink Bourbon, Gesha and Chiroso, and experimenting with fermentation. Today, Finca Las Flores is a modern project, with Johan responsible for new processing methods and final quality control, and Diego taking care of fermentation and drying.

This lot is processedusing the washed anaerobic method. Hand-picked and sorted cherries from the 2025 harvest first undergo fermentation without oxygen, which enhances their sweetness and fruitiness, then they are washed with clean water and slowly dried to preserve the beans' clean, structured flavor profile. The result is a select 100% Arabica roasted to a light city profile, which opens beautifully in all filtered preparations.

Doesn’t taste much like a coffee. Depending on your taste this might be a good thing or bad
Interesting notes of elderflower and spices. Didn’t taste minty to me.
Enjoyable and tasty, would make for a good cold brew
The elderflower syrup taste is quite strong. I am fairly certain this taste comes from an undisclosed additive. I see no problem with additives, but there should be an ingredients list. (allergies….?)
No coffee tastes like this alone due to fermentation or thermal shock. Something was added at some point of the processing.
Roasters need to start asking the resellers where does the aroma really come from.
For as long as there is no transparency around the flavors, I cannot recommend these coffees.
I ordered Las Flores Chiroso and received the Java variety with a different packaging.

Process: Check the Ole Kristian‘s recipe for Hario Switch. I usually do a 1 minute immersion in the end for more body. This is a highly processed coffee that extracts easily, so I‘m grinding it coarser than my usual and do low agitation.
