The Finca La Suma farm is owned by Fernando Zuñiga, who inherited it from his parents. Fernando decided to continue the family tradition, but at the same time modernized the farm and added a new variety of Pink Bourbon. His farm is surrounded by a nature reserve that protects the biodiversity of the area. Fernando and his wife are not only passionate about growing quality coffee, but also focus on sustainability and the efficient use of natural resources. Finca La Suma is thus a place where tradition and innovation come together to create excellent coffee.
A natural process was chosen for the processing of this lot, which is rather unusual in Colombia, but in this case proved to be the ideal choice. After harvesting, the cherries were carefully hand-picked and only the ripe fruit was used for processing. The cherries were then dried on raised beds for between 22 and 26 days, turning them regularly to ensure even drying. This process preserves all the fruity notes and sweetness of the cherries, guava and lime, making the coffee distinctively fruity and juicy.
