This washed Chiroso offers a flavor profile full of tropical fruit, white tea, and delicate sweetness with an elegant structure. Coffee from an extreme altitude of 2,100 meters above sea level feels like a spring breeze in a cup. Light, clean, and yet exceptionally complex.
David Berrio grows his coffee on a small farm called La Casita, which is barely 1.5 hectares and looks more like a garden than a classic plantation. It is located high in the Urraa mountains, in one of the most remote areas of Antioquia. Access is so difficult that coffee from La Casita often reaches the world thanks to a cargo plane carrying avocados, which is the main link to civilization. It is this isolation and the care given to each plant that give the coffee its unmistakable character—a delicacy, purity, and depth that unfolds in the cup with every sip.
The washed processing is carried out with a precision that reflects David as a producer. Ripe cherries are picked by hand, then floated to remove defects, and then left to rest in bags for up to two days. After being transported to the farm, they are pulped and fermented for five days under water in stainless steel tanks before being dried to exactly 10. 5% moisture. The result is a coffee with a clean, structured profile and a distinctive sweetness that confirms the extraordinary potential of the Chiroso variety. This variety, originally from Ethiopia, is now increasingly grown in Antioquia.
