Behind the coffee is Juan Carlos Artunduaga, one of the producers who have long set the bar in Huila. At his Finca La Granada, he works with different varieties and likes to test different approaches, but he is best known for his natural lots full of juiciness and character. The farm is located at an altitude of around 1,800 meters above sea level, where warm days alternate with cool nights; it is this rhythm, together with the rich Andean soil, that helps the cherries ripen slowly and evenly. The result is a raw material with high sweetness and a clear fruity expression. Juan Carlos also works with admirable precision – the careful selection and control of each step is evident in the cup, which is balanced, layered, and incredibly drinkable.
The processing method plays a key role here: natural with controlled fermentation for 100 hours, followed by slow drying in marquesinas (covered drying rooms) for about 20 days. Controlled fermentation intensifies the fruit esters, shifts the profile to a "tropical" position and adds that famous funky spark, while controlled drying locks in the sweetness and maintains purity without unwanted tones. This results in a beautiful combination of tropical fruit syrup, dark chocolate, and a light floral-tea texture that holds the profile together and prolongs the aftertaste.
