A.M.O.C presents a limited edition coffee /118 from the Palestinian region of Colombia , roasted for filter brewing. This limited edition was created as a tribute to our collaboration with London's Rosslyn café and embodies the spirit of precision, courage, and friendship on which this coffee is based.
Behind this lot is Jorge "Pikudo" Andrade, a farmer whose path to coffee was not straightforward. He made a living growing fruit for many years until 2018, when the closure of the border between Colombia and Venezuela virtually destroyed demand for his produce overnight. Instead of giving up, he started over – he obtained Rosado seeds from Orlando Sánchez and began growing specialty coffee. Within a few years, he built a reputation as a producer who combines precision work, an innovative approach, and a commitment to never compromise on quality.
The beans are processed using the anoxic natural method , which is one of the more demanding methods but rewards with a rich and layered profile. After harvesting, the ripe cherries are left to rest in their husks for 12 hours, then fermented for 60 hours in a closed environment without access to oxygen. This is followed by slow drying for approximately 20 days in a covered greenhouse, where the flavor stabilizes and deepens. This process brings intense sweetness, clear fruity notes, and a full chocolate body to the cup, which lingers beautifully in the aftertaste. The result is a coffee that is as much a story of tenacity as it is a demonstration of what a precisely processed Colombian filter can achieve.
