The coffee comes from the Huila region of Colombia, known for its ideal altitude for growing coffee, which is said to be around 1, 750 meters above sea level. The Pink Bourbon variety grown by Wilfredo Ule is known for its sweetness and unique flavor profile, which is ideal for natural processing. Wilfredo, a second-generation farmer, has been growing specialty coffee for over 20 years and experiments with different varieties and processing methods. His son Chucho takes care of wet milling and drying using a ventilation system designed by Wilfredo.

The coffee is processed using the natural method, which ensures that it acquires a strong fruity intensity and a richer flavor profile. The cherries are sun-dried and the fermentation process is carefully monitored to preserve the purity and complexity of the flavors. This processing method is ideal for bringing out the natural sweetness that this coffee offers. Wilfredo has also passed on part of his farm to his sons and granddaughter Carolina, who cares for 100 Pink Bourbon trees. Her story is an inspiration to the whole family, connecting school with farm life, and she dreams of one day becoming a professional cupper and helping to spread her family's coffee around the world.
