Typica Honey Hacienda El Obraje from Hydrangea Coffee Roasters is a Colombian coffee with a clean, fruity, and subtly herbal profile. In the cup, notes of raspberry leaf, clementine, and Concorde pear come together to create a fresh, sweet, and elegantly layered impression. The citrus notes lend the coffee brightness, the pear softens it, and the raspberry leaf adds a light herbal tone. It’s a cup that feels clean yet still has enough fruitiness and aroma to delight you from the very first sip.

The coffee comes from Colombia, from the Hacienda El Obraje farm in the Tangua region of southern Nariño. Behind the production is Pablo Andrés Guerrero, an architect from Pasta who transitioned to coffee farming after growing grains and fruit. The farm lies at an average elevation of 2,200 meters, and 55% of its area is designated as an environmental reserve. Approximately 39 hectares are dedicated to coffee, where varieties such as Typica, Geisha, Caturra, Castillo, Maracaturra, Yellow Bourbon, Pink Bourbon, Moka, and SL28 are grown. This lot consists of the Typica variety and reflects the farm’s meticulous work with separate varieties.

Processing is carried out using the honey method. Ripe cherries are hand-picked, sorted by color, washed, and separated by density using the floating method. The process involves two fermentation phases. First, the whole cherries ferment for 36 hours in 200-liter plastic tanks without access to oxygen or light. The coffee is then hulled without the use of water and fermented for another 24 hours in dry mucilage under the same conditions. Finally, it is dried for 20 days on solar drying panels.
