Brilliant. I was expecting it to be very fragrant, as Concept sometimes “tends to do,” but it was just right. And that flavor! OMG. Beautifully tart—those limes were practically winking at me from the cup, but so subtly, as if wrapped in a blossoming elderberry bush. It’s similar to when my mom makes elderflower syrup, just without that intense sweetness. It worked better for me in the AeroPress, like most subtly tart coffees, but it also turned out surprisingly great in the Chemex—I didn’t expect that—and it automatically makes it my discovery of the year. I wish it would come back to the lineup…
