This exclusive lot from the French roastery Tanat Coffee comes from the Pitalito region and is made from the prestigious Wush Wush variety, known for its rarity and complex flavor profile. In the cup, an elegant floral aroma of lavender unfolds, complemented by the juicy sweetness of cherries and pineapple, while a delicate, candy-like acidity lends the cup a joyful playfulness and immediately sparks curiosity about what else each sip has in store. Behind this unique coffee experience are brothers Jhonatan and Johan Gasca, who run the Finca Zarza farm with passion and a focus on precision. The farm is located in the highly regarded Pitalito region, where the coffee trees benefit from ideal altitude and a vibrant landscape. The brothers are dedicated not only to cultivation but also to experimental processing methods that push the boundaries of traditional Colombian fermentation. Every bean is the result of care, experience, and determination, which, combined with the terroir, produce a coffee that will enchant you and keep you coming back for more.

The key to its unmistakable flavor is an experimental natural process featuring a long anaerobic fermentation lasting 76 hours, followed by a brief 12-hour oxidation in the air and a 24-hour immersion in water at 60 °C. This precise method locks in the aroma and creates an amazing complexity of flavors, while slow drying over ten days ensures harmony and balance. The resulting cup is intense, floral, yet sweetly fruity and acidic, reminiscent of a delicately fermented candy.
