The key to its unmistakable flavor is an experimental natural process featuring a long anaerobic fermentation lasting 76 hours, followed by a brief 12-hour oxidation in the air and a 24-hour immersion in water at 60 °C. This precise method locks in the aroma and creates an amazing complexity of flavors, while slow drying over ten days ensures harmony and balance. The resulting cup is intense, floral, yet sweetly fruity and acidic, reminiscent of a delicately fermented candy.
