La Victoria is a 47-hectare farm in the Ortega region of Tolima, owned by Aristobulo Rayo Mendez. The farm has only 8 hectares of coffee plantations and 10 hectares for the subsequent storage of coffee. This farm prides itself on the precise preservation of the harvest. And what does he do with those 8 hectares? It grows the Castillo, Caturra and Gesha varieties. Aristobulo is also a member of the Cafe Agrario producers' association, which cooperates with the export company Siruma. Siruma invests in the association through seminars on processing and agronomy, which are important pieces of the puzzle for farmers, and we like to see this link.
Thanks to the washed processing method, every cup of this coffee is perfectly clean, light and fresh. In the washed method, the beans are immersed in water after harvesting to undergo a short fermentation process and then peeled and thoroughly washed. This is followed by fermentation in a water bath, which lasts up to 36 hours. During this time, the grains are stripped of the last of their pulp, resulting in a fresh, clean taste with a slight sweetness.
