This coffee from the Dutch roaster Friedhats Coffee is designed for those looking for an unusual taste experience. Sourced from Colombia, it has undergone a 144-hour anaerobic fermentation that brings sweet notes of candy-flavoured watermelon to the cup , complemented by the juiciness of pineapple and raisins. The result is an unforgettable flavour combination for anyone who likes to discover new flavours.

Chiroso is a coffee variety whose popularity is growing rapidly - and with it the mystery of its origins. Originally thought to be a local mutation of the Caturra variety, which has a similar appearance but a longer cherry shape, it came to be called 'Caturra Chiroso' or 'elongated Caturra'. However, recent genetic tests have revealed that, rather than being related to Caturra, it is a mutation of the Ethiopian Heirloom variety, which has also taken hold in Colombia, making its origins even more mysterious and its popularity all the more interesting. Whatever the truth, this lot from the Quindío region , specifically from the Finca Belén farm run by Manuel López, is definitely worth a try.

Theanaerobic natural method that this coffee has undergone is one of the most innovative processing methods and gives the resulting taste an unmistakable character. At the Finca Belén farm , the coffee cherries are first carefully picked according to their ripeness and then moved to the fermentation tanks. Lower density cherries that float to the surface are removed, after which the water is drained and anaerobic fermentation begins . This process takes 144 hours, during which time the cherries gradually decompose and release their juice, which is carefully controlled in terms of temperature so that it can ferment with the cherries. During this process, deeper and richer flavours develop inside the fruit that would remain hidden during normal processing. Once fermentation is complete, the coffee is dried on African beds for 20 days, turning it regularly every hour. The result is a coffee with an intense texture, a distinct sweetness and an unusual flavour profile that will surprise you with its complexity.
