This washed Castillo variety brings together delicate notes of elderflower, sweet caramel, and candied orange peel in the cup. The coffee feels airy and light, yet offers a sufficiently full body and balanced sweetness. It’s an ideal choice for anyone looking for floral complexity and clarity in a filter brew. This coffee comes from the Las Nubes farm – meaning “The Clouds” – and the name perfectly matches its location, sitting at 1,600 meters above sea level in the Gigante area of the Huila department. Erika Perez is the first generation coffee producer in her family and harvested her very first lot in 2024. Her farm is home to Castillo and Variedad Colombia trees, which mature slowly thanks to the altitude and unique microclimate – a key to developing complex flavor profiles. Her very first harvest showed that Erika has an extraordinary sense for quality and detail – her coffee turned out clean, floral, and elegant, just the way we love it.

The Castillo variety was washed – a process that perfectly highlights the delicate and floral character of this coffee. After handpicking ripe cherries and careful sorting, the coffee was fermented, thoroughly washed, and dried on raised beds. The result is a cup that is bright, clean, and delicately sweet – evoking notes of elderflower, citrus peel, and caramelized sugar.
