The base of Ember coffee is theCastillo variety from the Huila region of Colombia . The coffee is the result of a carefully balanced blend of 90% washed beans and 10% beans processed using the advanced double anaerobic thermal shock method. This preserves its purity, natural sweetness, and light body, making it ideal for everyday drinking. Ember is part of the Essentials collection, which means it is affordable but definitely not ordinary—it brings the best of Diego's research and love for coffee, this time in a simpler and more accessible package.

The double anaerobic thermal shock process is one of the pinnacles of current fermentation innovation. The cherries first undergo fermentation without air, which enhances their complexity and sweetness.
