New York roaster SEY Coffeepresents Eduar Moriones García - Finca Brisa coffee. This coffee from the Huila region of Colombia will impress you from the very first sip. Notes of ripe red fruit meet the aroma of lemon zest. Underneath these notes lies a firm, creamy structure that holds everything together. The taste is clean, precise, and yet surprisingly full, as if Colombian strength were combined with elegance. Thanks to a lighter roast for filter coffee, the natural sweetness and delicate acidity stand out, brightening up the cup without a single sharp note.
The coffee comes from the small Finca Brisa farm in the El Recreó El Pital area, located in the Huila region at an altitude of approximately 1,950 meters above sea level. Producer Eduar Moriones García mainly grows the Pink Bourbon variety, known for its distinctive aroma and delicate, fruity acidity. The farm uses natural tree shade and traditional cultivation methods without chemical intervention. Thanks to the cool nights and long ripening period of the cherries, the beans acquire greater density and complexity – something that manifests itself in the cup as depth, balance, and a rich, sweet aftertaste. SEY Coffee only recently began working with Eduar, and even during the first harvest, it was clear that he is a producer with an extraordinary eye for detail and quality.
The beans are processed using the washed method. After being hand-picked and sorted, the cherries are left to ferment in the pulp for 24 hours, then mechanically hulled and fermented for another 48 hours. This two-stage process develops purity, finesse, and a slightly citrusy character. After washing, the coffee is dried for 20-25 days on raised beds. The result is a coffee with exceptional purity, elegant acidity, and texture.
