Edinson Argote’s farm is located in Oporapa, in Colombia’s Huila region, at an elevation of 1,700 to 1,800 meters above sea level. The exceptional climate of the mountain air and the slow ripening of the coffee cherries create ideal conditions for the development of complex aromas. Edinson works with micro-lots of 100–300 kg of cherries, which allows him maximum control over the quality of each harvest. His method combines tradition and innovation, with each bean undergoing careful sorting and fermentation to highlight the uniqueness of the Geisha and the terroir that shaped it.
The advanced natural processingof this Geisha involves double fermentation and careful drying. After the first 72-hour fermentation, the coffee is dried for 12 days until it reaches 20% moisture content, then rehydrated for four days with selected yeasts, and finally undergoes a final 76-hour drying at 40 °C.
