The Dos Mundos roastery bring a unique variety of Sidra from the Colombian farm Quebraditas, where traditional cultivation methods are combined with a modern approach to fermentation. This washed coffee, with its double fermentation, offers an elegant, floral profile with notes of rose, wild strawberries, cantaloupe, and dried pineapple. Sidra is one of the rarest Arabica varieties, known for its complexity and depth of flavors, which in this harvest develop into unexpected nuances. The result is a coffee that exudes vibrancy and sophistication, bringing a delicate acidity and perfectly balanced sweetness to the cup.
The Quebraditas farm, run by Ángela Rojas and Edinson Argote, is located in a lesser-known part of the Huila region, in the Oporapa area, Alto Caparrosa. Edinson, an experienced grower from the Cauca region, and Ángela, a former nurse, joined forces to create a project focused on exceptional varieties and innovative cultivation methods. Their passion for specialty coffee drives them not only to produce high-quality microlots but also to contribute to the development of the local community. Oporapa is not yet as famous as other coffee centers in Huila, but thanks to farms like Quebraditas, it is gaining attention. Edinson and Ángela actively support other farmers by sharing seedlings of rare varieties and helping them improve their processing techniques.
This lot underwent a precise fermentation process, where thermal shock and the inoculation of yeasts play a key role. This method helps stabilize the fermentation process and creates a consistent and refined sensory profile. Carefully selected cherries are handpicked and fermented in two phases, which enhances the development of intense fruitiness and a clean, elegant acidity. The final drying takes place under controlled conditions to ensure the beans retain their complexity and richness of flavors. Every detail of this process demonstrates that Quebraditas is a farm of the future, not only experimenting with new varieties but also pushing the boundaries of specialty coffee quality.
