The coffee comes from small growers in the Huila and Tolima regions, two neighboring areas known for producing high-quality specialty coffee. Local farmers cultivate smaller plots of land, where they tend to the plants by hand and with the utmost care. This coffee has been decaffeinated using the Sugarcane Decaf process . The coffee is first steamed at very low pressure to remove the parchment. The coffee beans steamed with hot water soften and swell. This process prepares the beans for hydrolysis of the caffeine, which binds to chlorogenic acid salts in the coffee. The extracts (naturally obtained through sugarcane fermentation and not chemical synthesis) are then applied to the moistened coffee. The coffee is washed several times with a natural ethyl acetate solvent to reduce the caffeine content to the desired level. Once this process is complete, the coffee must be cleaned of any remaining ethyl acetate using a stream of saturated steam under low pressure before the next step. From there, the coffee is sent to vacuum drying drums, where the water previously used to moisten the beans is removed and the coffee is dried to a final moisture content of 10 to 12%. The coffee is then quickly cooled to room temperature using fans. The final step is to apply carnauba wax, which protects the coffee from environmental conditions and helps ensure stability.
