Colombia BLUEBERRY from LOT Roastery is a coffee that doesn’t really stick to the classic Colombian profile. In the cup, it unleashes a full-on blueberry explosion, complemented by raspberries, a juicy, juice-like note, and a delicate floral quality. The result is a distinctive, sweet, and almost dessert-like fruity profile that delights from the first whiff to the last sip. You can brew it using a filter or a modern espresso method—that is, an espresso made from a lighter roast with a shorter extraction time, which better highlights its fresh and fruity character.

The coffee comes from Colombia, specifically from the La Sirena farm near the city of Armenia in the Quindío region. The Castillo variety grows here at an elevation of 1,420 meters, and Juan David Puerta is responsible for its unusual processing method. After years of experimentation, in 2021 he perfected a method that allows him to create distinctive, clean, and—above all—consistent flavor profiles. La Sirena is thus the place where traditional coffee production meets a healthy dose of culinary alchemy and a desire to explore all that coffee has to offer.

The coffee is processed using the washed method with osmotic dehydration and blueberry syrup. After initial fermentation and hull removal, the coffee beans are immersed for approximately 48 hours in concentrated blueberry syrup with a precisely calibrated sugar content. During osmotic dehydration, the beans release some of their water while simultaneously absorbing aromatic compounds from the fruit solution, allowing the blueberry character to penetrate deep into the bean. The coffee is then gently dried, first in the sun on movable roofs called “elbas” and subsequently finished in mechanical dryers to the desired moisture content. Simply put, Blueberry isn’t a coffee where you’ll have to search hard for blueberry notes. Instead, you’ll find yourself wondering how so many blueberries fit into a single cup.
