Processing is done using the natural method, which allows the natural character of the Colombia variety to develop to its fullest. Hand-picked, perfectly ripe cherries ferment for approximately 72 hours and are then slowly dried in the shade, along with their skin and pulp, to preserve the purity and balance of the flavor.
