The coffee comes from the São Sebastião do Anta region of Mata de Minas, Brazil, from the Ze Claudio farm owned by producer José Claudio. His story is an inspiration - as a young man, he left home for São Paulo and later to Portugal to earn enough money to fulfill his dream: to have his own farm. He fulfilled it in 2000 when he returned to his home area of Inhapim and started growing vegetables first - coffee came later, but with all the more intensity.
The beans are of the Catuai 144 variety, processed using the anaerobic natural method. The ripe cherries are first fermented without access to air, which develops fruit depth and a pronounced sweetness. This is followed by drying to bring out the texture and complexity of the resulting cup. Thanks to this process, the coffee acquires a strong character that is perfect for modern espresso.
