The coffee was grown by Edimar Miranda on his farm Sítio Morada do Sol in the Araponga area, which is part of the Matas de Minas region. Edimar grew up in a family that had been growing coffee for generations, and in the 1980s he inherited a piece of land where he established his own farm with his wife and children. In 2014, he began to focus on specialty coffee and soon made a name for himself in regional competitions. Today, he is considered one of the leading figures in the region. In addition to growing coffee, he is also involved in education and is the founder and director of a local agricultural school focused on biodynamic and sustainable farming without chemicals.
This coffee was processed using the honey method with spontaneous fermentation. After removing the husk, some of the sweet pulp remains on the beans, which are then dried slowly on raised beds. Thanks to this process, the coffee retains its natural sweetness, full body, and delicate notes reminiscent of dried fruit and sweet liqueurs. The resulting cup is clean, harmonious, and works well on its own or as a base for milk drinks.
