This lot is produced by Natalia Brito and André Luís Garcia, who run the Jaguara farm in the Campo das Vertentes region. This unconventional location offers ideal conditions for growing high-quality coffee due to the volcanic soil and higher altitude. Jaguara was originally founded by three friends in 2001 and today is not only a center for innovative approaches to fermentation and drying but also a place that connects small farmers to the market. André is an experienced agronomist and researcher at the Procafé foundation, while Natalia, a second-generation producer, focuses on coffee tasting and business. Together, they experiment with fermentation to achieve unique flavor profiles.

This lot went through the extended fermentation natural method, which means extended fermentation of whole cherries before drying on African beds. Thanks to this process, the coffee gains deeper sweetness, intense fruity notes, and a rich body. Compared to the classic natural method, the fermentation time is extended, which helps extract complex aromas without disruptive fermentation notes. Thanks to precise filtering roasting, it is ideal for V60, Chemex, Aeropress, or batch brew and will provide you with a sophisticated experience with innovative Brazilian character.
