Yana WX is located in a fertile tropical area at a high altitude, ideal for growing high-quality coffee. The story of farmer Roberto Mendoza began in 1967, when his family brought the first coffee seedlings from Coroica because they were not available in their area. Although Roberto earned a degree in economics in La Paz in 1992, he never left coffee farming. After returning from university, he became involved in the local community and led organizations with the aim of selling Bolivian coffee on foreign markets. With a vision of strengthening Bolivian coffee production, he bought several hectares of land in Apolo, where he began farming using organic compost and soil protection for the sustainable cultivation of high-quality coffee.
In the washed method, the coffee cherries are first stripped of their skin and pulp using a peeler. The green beans, which remain with parts of the pulp, then undergo several hours of fermentation, which facilitates the removal of the remaining pulp. After fermentation, the beans are thoroughly rinsed with water to remove any remaining sugar. They are dried on raised beds for 5 days and later in mechanical dryers until the parchment reaches 12% moisture.
