The tea plants are shaded for several weeks before harvest to preserve the leaves' vivid green color, higher amino acid content, and rich umami flavor. The soil, rich in volcanic ash, provides the plants with natural minerals, giving the tea a balanced and delicately sweet flavor. Ceremonial matcha is carefully processed – the leaves are briefly steamed, dried, and traditionally ground on granite stones into a silky-smooth powder.

How to prepare it
For a cup of matcha tea, put 1 teaspoon (approx. 2 g) in a bowl, pour 100–150 ml of hot water at a temperature of 70–80 °C (not boiling) and whisk with a bamboo whisk for 20–30 seconds until a fine foam forms. For a latte, first mix 2 g of matcha powder in approx. 50 ml of water, then add 150–200 ml of frothed milk or plant-based beverage. For a smooth texture, we recommend sifting the powder beforehand.
