Scott Rao, Amherst Massachusetts, visiting his former namesake cafe location. . It’s been a few years since I’ve been to this spot and the last time, it still carried the Rao name, although Scott was not involved anymore. . My first coffee came from Scott in this shop around 1995 and although we never knew each other back then, when I got into coffee years later, it was Scott’s brewing books that encouraged us to push ourselves for better results. . A few years later, his ideas about visualizing the roast process through metrics, controlling variables and limiting factors that can disrupt consistency, were instrumental in our own roasting evolution. They have since become essential tools and key pillars of modern coffee roasting. . When founding Five Elephant with Sophie, my experience as a customer in this shop in the 1990s was one of 2 major influences that convinced us to take a risk to roast our own coffee. . It was nice to be reminded today that cafe community, passion for our craft and a drive to make coffee and the cafe experience better has lasting effects on people. . Meet Wayne! You have probably spotted him in our Kreuzberg cafe. He is from England and has been with us for three years (making him our longest serving cafe member) and has been working in coffee since training in Australia ten years ago. . Over the years Wayne has noticed that the cafe has definitely gotten a lot busier, and it seems that the customers' knowledge has also developed in this time- he says “I get asked about which coffees we have on more now, and people are drinking more filter coffee.
