Illegal Beans roastery brings you coffee that will immediately captivate you with its freshness and purity. This coffee from the Ugandan mountains is filter roasted and offers a delicate tea character in the cup, which blends beautifully with citrus freshness and nutty sweetness. It is dominated by notes of green tea, lemon zest , and hazelnut, complemented by a hint of gingerbread spice. The result is an elegant, light, yet layered cup that tastes like lemon cake served with afternoon tea. This coffee is ideal for those who love clean, refreshing filters that can be fragrant, delicate, and yet unmistakable.
Behind the coffee is a community of approximately 300 small farmers who farm on the slopes of the Rwenzori Mountains at an altitude of 1,500-2,000 meters above sea level. The traditional SL14 and SL28 varieties are grown in this area, which are known for their distinctive acidity and ability to carry complex flavor notes. Coffee is part of everyday life here, and families tend to their small plots with care and an emphasis on quality. Thanks to cooperation with the local Agri Evolve station, farmers can further improve the quality of their production and show that Uganda has a firm place in the specialty coffee sector.
Processing is done using the washed method. Hand-picked ripe cherries are first carefully sorted, then dry fermented for approximately 48 hours. This is followed by washing and slow drying on raised beds, which allows the coffee to retain its freshness and clean flavor profile. This process ensures consistency across lots and allows the fresh citrus acidity, subtle sweetness, and nutty finish that makes this Ugandan coffee unmistakable to shine through.
