SOL – Summer Coffee is like a summer soundtrack, only instead of notes, it plays on your taste buds. This seasonal blend was created to taste exactly like the fruits that grow during these hot days – forest fruits, blackcurrants, and chocolate cookies. The flavor profile is fresh and rich: fruity sweetness, delicate juicy acidity. The cup blends notes of sweet blueberries, tart blackcurrants, hints of chocolate sweetness, and summer freshness reminiscent of an ice-cold cold brew on a sunny terrace. SOL 2025 is a blend that is suitable for all preparation methods, whether you're making a V60, an aeropress, or a cold brew in a thermos for a trip – it will always offer positive energy and a summer mood in every sip.

The base of this summer blend is fully washed Caturra from Colombia, specifically from the Santa Monica Jaira Arcily farm – a name synonymous with quality and an experimental approach to coffee. This traditionally processed batch adds sweetness and balance to the blend. Next, we have a select coffee from Kenya, from the Chania and Oreti farms, grown by Boyce Harris – one of the most stable and respected figures in the Kenyan coffee world. His French Mission variety coffee brings juicy acidity and delicate floral complexity to the blend. The third component is a natural Pacamara from El Salvador, from the Magaña family farm, which stands out for its fullness of flavor, fruity smoothness, and slightly winey depth. And finally, the icing on the cake – a small percentage of experimental Honey Castillo fermented in lulo fruit juice, again from the Santa Monica farm. This component adds a tropical sparkle and playful originality to the blend.

The SOL 2025 blend is the result of a precise selection of four different coffees that complement each other like ingredients in a perfect summer cocktail. The Colombian Caturra base and Kenyan French Mission were processed using the traditional washed method, which highlights purity, acidity, and sweetness. Natural Pacamara from El Salvador adds a creamy body and dried fruit notes – thanks to the dry processing method, where the cherries are dried whole, the coffee retains its complex fruity tones. The boldest component of the blend is undoubtedly Honey Castillo fermented with lulo tropical fruit juice, which brings a unique juiciness and tropical freshness that catapults the blend from good coffee to a truly exceptional summer experience. All components have been roasted with care to complement each other and create a harmonious yet complex cup that you can enjoy anytime, anywhere – ideally in the sun.

Pleasant aroma during preparation and afterwards (honey, fruity)
The resulting cup is sweet and full-flavored.
I use it on v60, but I'll try it on cold brew too. I think its aroma makes it really suitable for that.
When I drink the filter while it is still hot, the taste is slightly pungent and bitter. After five minutes, once the filter has cooled down a little, the pungency subsides and only sweetness remains with a hint of pleasant acidity. I can't blame the bitterness on the beans, but I'll just adjust the recipe next time :)

Preparation method: v60 Coffee (g): 20g Water (g): 300g Water temperature: 95
Grinder (setting): manual grinder... probably doesn't matter, but I used a finer grind Process: Initial blooming: 70g, 45s... then I added water to 110g, waited 30s... After 30s, I added 120g. The coffee ran through in 2:50.
