This blend combines Brazilian IGARAPÉ coffee processed naturally and Colombian SERRANIA with a washed profile. The decaffeination process uses a gentle EA (ethyl acetate) method, which utilizes natural components of sugar cane to gently extract caffeine from green coffee beans. The process begins with steaming the beans, which opens their cellular structure and allows for more effective caffeine removal. They are then immersed in a solution of water and ethyl acetate, where caffeine is selectively extracted. After several cycles, the coffee is steamed again to remove any remaining solvent, and the beans are dried back to their original moisture level. The result is coffee that retains its natural flavor characteristics without undergoing a chemically aggressive process.
