The coffee is sourced from the Nyabihu area where Shyira station is located, the highest station in Rwanda(up to 2300m above sea level). This region is known for its challenging nature, high cloud cover and rainy weather, which creates unique conditions for growing coffee cherries. The farm uses both innovative and traditional processing methods, including dry fermentation and traditional Ikinimba, which contribute to the richness of the flavour profile.
The beans are processed using the washed method. It all starts with a thorough hand-picking of the ripe cherries. The cherries are peeled using the sustainable Eco Pulper system, dry fermented for 12 hours and then sorted to ensure that only the best grains are processed. Finally, the coffee is dried on raised beds for 30-35 days under constant supervision, ensuring a clean and balanced profile that highlights the unique characteristics of the Nyabihu region.
