About Prolog Coffee

Introducing Prolog Coffee, a Scandinavian roastery from the heart of chilly Copenhagen. The main idea behind this roastery is to celebrate coffee as a crop and, of course, its target customers. They are driven by a passion for coffee and a desire to share their experience and knowledge. That's why, in addition to visiting the coffee bar, Prolog Coffee customers can also attend one of their events, book their catering services, or simply choose from a wide range of select coffees.

Prolog itself began in early 2016. And why the name, you ask? It's simple. The main goal of this Danish roastery is customer satisfaction, whether it's someone waiting for their coffee in their café or someone ordering their coffee in bulk. And because the path to this goal is difficult and requires knowledge and effort, they are always looking for the most effective way to achieve these goals, and each new path is also a new beginning – a prologue. Prolog was founded in March 2016 by Sebastian Quistorff and Jonas Gehl. Originally intended as a temporary installation, its success led to it becoming one of the most popular places to drink specialty coffee in Copenhagen. The roastery initially collaborated with KOMBO, a company that focuses on providing food experiences. This collaboration was so successful that they continue to work together today. Prolog has remained in the same location, and together they are successfully engaging their customers in a dialogue about food itself, of which delicious specialty coffee is an integral part.

At Prolog Coffee, they believe that high-quality, select coffee can only be properly priced. That is why they strive to get to know the farmers from whom they source their green coffee as well as possible. If this is not possible, they try to source their coffee through selected importers who they know will pay the farmers a fair price for their coffee, thereby contributing to improving their living conditions and thanking them for their work and effort.
