This coffee from the Junin region of Peru impresses at first taste with its delicate sweetness and floral aroma. The flavour is dominated by notes of dulce de leche, accompanied by yellow peach and a hint of lavender, which develop beautifully , especially as the cup cools. The espresso from this coffee has a juicy, smooth body, lively acidity and a long aftertaste reminiscent of tropical fruits and a subtle herbal undertone. This is an exceptionally complex washed coffee that can appeal to both lovers of sweet, fruity profiles and those who appreciate purity and elegance in a balanced espresso.

The coffee is sourced from a small farm called El Pital in the Uchubamba region, located on the edge of the jungle in the Peruvian province of Jauja. At its heart is Enma Palacios, who not only grows coffee on the land donated by her father, but also other crops such as carrots, beans and alfalfa - and raises more than 100 guinea pigs. Her farm is a testament to family work and a deep connection to the land and the community. In addition, Enma works with her daughter Dula, who is an expert in cupping and processing coffee, and together they improve the quality of their production every year. The coffee from their hands is the result of patience, care and true commitment that you can literally feel in every sip.

The coffee is processed using the washed method, complemented by a precise two-step fermentation. First the whole cherries are fermented for 30 hours, then they are de-skinned, followed by another 45 hours of fermentation in open cement tanks. After this process, the grains are thoroughly washed with clean water and then dried on raised wooden beds. This processing method enhances the purity, floral character and sweetness of the resulting cup, while preserving its fruity complexity. Enma received not only a fair purchase price for this micro-lot, but also an additional quality bonus that allows it to continue to experiment and push the boundaries of specialty coffee in Peru.
