The farm behind this coffee is Dream of Boquete, located high in the mountains of Panama in the Boquete region - a region renowned for producing the finest Geisha. The name of the farm is no accident. Growing coffee in these conditions is truly a dream come true - with nutrient-rich volcanic soil, a foggy climate and an altitude of over 1,500 metres above sea level. Here, Geisha ripens slowly and with grace. The producers of Dream of Boquete take great care not only in cultivation but also in harvesting - the cherries are hand-picked at the moment of ideal ripeness. During the harvest, the trees turn ruby red, as if the entire forest were on fire with light. This image was the inspiration for this lot - a combination of the beauty of nature and precision farming.
The processing is natural - the cherries are dried whole after picking, without removing the flesh. This process is more demanding in terms of quality control, but brings more pronounced fruit notes, fuller body and a more interesting texture to the cup. In this Geisha, the natural comes through not only with sweetness and subtle fermentation, but also with an incredibly clean profile.
