This is accompanied by a floral burst of jasmine and a fresh note of raspberry lemonade, which adds lightness and energy to the overall flavor. The coffee comes from Finca Santa Teresa, located in the Volcán Barú area in the Chiriquí region of Panama, near the border with Costa Rica. The farm is surrounded by the natural beauty of La Amistad National Park and benefits from rich volcanic soils and an altitude of between 1,500 and 2,000 meters above sea level. The combination of air currents from the Pacific and Atlantic creates a unique microclimate, ideal for growing the most sensitive varieties. Producer Grant Fleming has been working here for a long time with carefully selected lots and an emphasis on detail during harvesting and processing. The farm also supports the community – thanks to its collaboration with the Casa Esperanza foundation, a school for workers' children has been established here, giving each cup a human dimension.
The Geisha variety is known for its aromatic complexity and delicate elegance, which requires a precise approach from harvesting to drying. On the farm, the cherries are selectively harvested across twenty lots and processed immediately after harvesting. In the case of this coffee, a washed method is used, which emphasizes the purity and clarity of the flavor. After the pulp is removed, the beans undergo controlled fermentation and are then dried on raised beds.
