TheMonte Cristofarm is located in thePeñas BlancasareaoftheJinotega department, one of Nicaragua's most important coffee regions. The mountainous terrain, constant fog, and fertile volcanic soil create an ideal microclimate for growing Arabica. Excessive humidity and the shade of tropical trees slow down the ripening of the cherries, resulting in a higher bean density and giving the coffee a full body and deep sweetness. The farm is surrounded by thePeñas Blancas Massif Nature Reserve, which is part of the Bosawás Biosphere Reserve, one of the largest protected rainforests in Central America.
Thenatural method is often used in areas with water shortages, especially in Africa and dry areas of Latin America, such as Brazil. In dry processing, the cherries are spread out on concrete surfaces or beds and dried in the sun or using dryers. The coffee is turned regularly to prevent mold and unwanted fermentation. Once drying is complete, the husk is mechanically removed in a dry mill. Dry processing adds characteristic flavor elements to the coffee that are independent of variety or terroir. Properly executed drying brings fruity notes and a creamy body to the cup.
