The Lady from Myanmar is an exceptional cup that combines the juicy notes of pomegranate and cherry compote with the warming sweetness of honey rum. Thanks to natural processing with carbonic maceration, it has a distinctive, complex yet perfectly balanced flavour profile that is best enjoyed in a filter. We celebrate another year of roasting with a coffee that carries not only a beautiful taste, but also a powerful story of female collaboration and determination.

Behind The Lady Specialty Coffee is a pair of visionaries, Su Nandar Linn and Thi Ha Gyawalie, who set out to change the world of coffee in the Ywangan region. Their goal was to create a more equitable and sustainable model where women coffee farmers have a dignified place and conditions. Today, they work with more than four hundred women farmers whose dedication, experience and fine sense of quality are imprinted on every bean. The coffee is grown, harvested and processed exclusively by women, making The Lady not just a name, but a tribute to those who create it.

The natural method with carbonic maceration is an innovative way of processing coffee that combines the traditional drying of whole cherries with a technique known from wine making. After harvesting, the ripe cherries are sealed in airtight containers where anaerobic fermentation takes place - that is, without access to oxygen. In this environment, natural enzymes and micro-organisms begin to act and change the structure and chemical composition of the cherries, resulting in intense sweetness, fruitiness and rich aromas. Fermentation time and temperature are carefully controlled to achieve a specific flavour profile. After fermentation, the cherries are dried whole in the sun, usually on raised beds, which adds another layer of complexity to the coffee. The result is a coffee with full body, a distinct sweetness, often a tropical or fermented character and unexpected flavor nuances that make each cup an unforgettable experience.
