We present one of the most interesting coffees offered by the Slovak roaster Spojka Roastery, aptly named Cookies. This unique lot comes from exotic Indonesia, specifically from the Toba region in northern Sumatra. It is produced by Bang Silelahi and his community of farmers, who specialize in so-called "single-family nano lots." It is the precise hand-picking of only fully ripe Catimor cherries and the strict supervision of certified experts (Q Grader and Q Processor) that guarantee that you receive the highest quality raw material, which stands out from the usual production in this area.
What makes this coffee truly exceptional is an innovative processing method called the Anaerobic Washed Fruit Enzyme Process. In this process, the coffee undergoes anaerobic fermentation using fruit enzymes, which dramatically changes its final flavor profile. The result is a coffee with a high cupping score of 85 points, combining the purity of washed processing with an incredible depth and sweetness that you would be hard pressed to find in classic Indonesian coffees. It is clear proof that modern experimental methods can take even traditional varieties to completely new dimensions.
The flavor profile of Cookies coffee is exactly as its name suggests – extremely sweet, warm, and complex. The cup is dominated by intense notes of freshly baked cookies, vanilla, and sweet caramel, which create a rich and creamy base. This dessert-like sweetness is pleasantly balanced by the freshness of red apple and a subtle touch of cinnamon in the aftertaste. Thanks to its balance and unique aroma, this coffee is the ideal choice for those who like to discover unconventional flavors and are looking for an intense coffee experience reminiscent of sweet baking. With this creation, Spojka Roastery confirms its reputation as a roastery that is not afraid to experiment and brings truly "brewtiful" treasures to the market.
