The Irish roastery Cloud Picker Coffee has prepared a real treat for lovers of sweet filter coffee. In this unusual blend of Red Catuai, Lempira, Icatu, and Parainema varieties, you’ll be greeted by sweet notes of blondie complemented by the juiciness of raspberries and a hint of melon. It’s all topped off with a delicate chamomile aroma, which balances the coffee and makes it a cup you’ll want to savor slowly and truly enjoy. The sweetness of the coffee beans has been perfectly enhanced by the honey processing method.

The coffee comes from the Marcala region and was produced under the auspices of the COMSA program, Café Organice Marcala. The program was established in 2001 and has since brought together local farmers primarily interested in organic coffee cultivation. Through its projects, the organization strives to raise farmers’ awareness of coffee cultivation and to support the education of children in the local community—25% of the organization’s revenue goes toward education. In the Marcala region, located at an elevation of 1,200 to 1,700 meters above sea level, not only common coffee varieties such as Red Catuai are grown, but also specially bred varieties such as Lempira, Icatu, and Parainema.

The beans underwent honey processing, which brought out their natural sweetness and created an unforgettable coffee experience. The coffee cherries are first harvested by hand and then carefully sorted to remove any unripe or damaged ones. The outer skin is then removed from the cherries, but the pulp is left on the bean. The beans are spread out on a flat surface and left to dry while being turned regularly. During this process, the pulp ferments directly on the coffee bean, giving it its characteristic flavor and sweetness. It is then removed from the bean along with the parchment. The result is a sweet coffee with minimal acidity.
