The coffee comes from the Atitlán Pasajquim Kape Cooperative in the Pasajquim area of the Sololá region in Guatemala. The coffee trees grow here at an elevation of 1,200–1,400 meters above sea level on exceptionally fertile volcanic soils, which provide the beans with a wealth of minerals and contribute to their sweet, full-bodied character. The cooperative brings together local growers who have long been dedicated to producing high-quality specialty coffee with an emphasis on sustainable farming practices and meticulous work on the farms. The result is a lot that faithfully reflects the character of the Atitlán region and demonstrates why Guatemalan coffees are among the most popular Central American origins.
This blend of Bourbon, Caturra, and Catuaí varieties was processed using the washed method, which highlights the clarity and balance of the resulting cup. After being hand-harvested, the coffee cherries are pulped, then fermented, washed with clean water, and slowly dried to the optimal moisture content. Thanks to this process, the coffee’s natural sweetness and velvety texture shine through, while the flavor notes remain beautifully distinct.
