The first sip transports you to a worldof red grapes, raspberries, and juicy blueberries—the dominant flavor profile of this Ethiopian coffee. This is followed by delicate floral notes of lavender, which lend the drink elegance and lightness, and a finish of dark chocolate —as if we were tasting a sweet dessert with a bitter depth. The coffee is sweet, full of life, and very well balanced – ideal for filter or gentler preparation, where these nuances really unfold.
The regional origin of this coffee is truly inspiring. It comes from the Guji-Uraga area in southwestern Ethiopia, at an altitude of around 2,100 meters above sea level. The local farming region is renowned for its ideal conditions: rich soil, adequate rainfall, healthy coffee plantations – all of which contribute to the creation of unique coffee cherries. The Zelalem Alemu farm and washing station processes fresh raw materials from small farmers who have an intimate relationship with "their" coffee and care about the quality of each bean.
When it comes to processing, this is where"experimentation"comes into play. The coffee underwent anaerobic fermentation (i.e., fermentation without air access), which enhanced its fruity and floral notes and deepened its overall character. This was followed by drying on raised African beds, which gives the beans time to develop complex flavors and aromas. Overall, the care taken is evident: from the selection of cherries to controlled drying and delivery to the roastery. This combination of terroir, altitude, and innovative processing gives the result a distinctive style and charisma—a great choice for someone looking for something special.
