The washed processing method reveals notes of berry fruit, sweet caramel, and a delicate floral aroma in the cup. Every sip is an experience that combines elegance, diversity, and balance of flavors.
Specifically, this coffee comes from the Boji washing station, located in the SNNPR region. The station serves approximately 500 small growers and is located near the town of Yirgacheffe, home to some of the most popular coffees in the world. The quality of Ethiopian coffee is influenced by the genetic diversity of the varieties, which results in different flavor profiles even among farms with the same growing conditions. Traditional processing methods and a deeply rooted farming tradition also play an important role, which is behind the creation of the infrastructure and unique coffees we know today. Thanks to new regulations, it is now possible to buy coffee directly from farmers, ensuring full traceability and fairer conditions for both parties.
This coffee has been processed using the washed method, in which the cherries first pass through a pulper that removes the skin and pulp, and the beans with pulp residues are then fermented for 36 hours to facilitate their separation. After fermentation, the beans are thoroughly washed with water and then dried in direct sunlight for 15 days on concrete surfaces or raised beds, giving the resulting coffee a clean taste, higher acidity, and distinct fruity notes.
