Select coffee Ethiopia XMAS BARREL CELEBRATION from the Polish roaster HAYB is characterized by notes of honey, cloves and rum.

Our previous barrel aged coffees were from Kenya, Rwanda, Colombia and in the past also from Ethiopia. We wanted to return to Ethiopia and present the XMAS BARREL CELEBRATION Christmas special. The coffee is aged in Four Roses bourbon barrels and One of Each beer from Artezan Brewery.

First there was the cask into which Four Roses bourbon was poured into the US a few years ago. After aging, the barrel had to leave the distillery and move on - in accordance with tradition and regulations, bourbon must always be in a fresh barrel, it cannot be used a second time! This empty barrel then flew to Europe, to Poland, to Warsaw, specifically to Błonia, to the Artezan brewery. This is where the Imperial Porter was then aged in, then when the barrel was empty, we filled it with coffee and buried it - and this is what came out of it. A unique Christmas special.

When processed using the washed method, the cherries go through a so-called peeler, where they collide with metal discs with projections or spikes at great speed, and the skin and pulp are removed from them. After this step, we will be left with a green grain, on which the pulp (sugar) remains. In order to remove these remains after the pulp more easily, the grains are left to ferment in tanks for several, often tens of hours. After fermentation, the pulp is separated from the grain and will go down more easily. This is where we come to the step that makes this method just washed. The coffee is moved from the tanks to the washing channel, where the beans are washed with water and the last remaining sugars - the pulp - are removed from them. Finally, the beans were left to rest in barrels for several days, which gave them an excellent aroma, which, however, does not overpower the taste of the resulting coffee. These grains are balanced, festive and create the perfect Christmas atmosphere.

My first experience with "barrel" coffee, which is not bad, but...
...not really my cup of coffee. I received it as a gift, I probably wouldn't buy it again myself.
