Get ready for a light and refreshing cup that will definitely brighten your day. This washed coffee from Ethiopia, expertly roasted by Mazelab, stands out with its citrus acidity, the sweetness of ripe nectarines, and a fresh, tea-like mouthfeel. And the finish? It is characterized by the delicacy of white flowers that will linger long after you finish your cup.
This washed lot comes from the Muntasha family, more specifically from farmer Mullugeta and his son Dege, rising stars in the Arbegona region of Sidama, Ethiopia, who began their coffee journey in 2021 after leaving their jobs as truck drivers. Mullugeta comes from the village of Bursa in the Arsi region and returned home with a clear goal: to produce excellent specialty coffee. In just a few years, he has already made a name for himself and placed well several times in the Cup of Excellence competition. Mullugeta collaborated with 600 small-scale farmers at an altitude of 2,150–2,400 meters to produce this lot.
In the washed method, the cherries first pass through a pulping machine, which removes the skin and pulp. The remaining green beans with pulp residue are then fermented for several hours to make it easier to separate the remaining pulp. After fermentation, the beans are washed with water to remove any remaining sugar. The coffee is then dried in the sun on concrete slabs or raised beds. In some cases, mechanical dryers are used if outdoor conditions are not suitable. The resulting coffee processed by this method has a cleaner taste, higher acidity, and distinct fruity notes.
