Ethiopia Halo Beritifrom Krok Roasters is an espresso-style coffee with a delicate, floral, and tea-like citrus profile. In the cup, notes of jasmine, peach, black tea, and lime come together to create a clean, fresh, and elegant flavor with a light citrus finish. It’s the perfect cup for moments when you want an Ethiopian espresso with a clean profile, delicacy, and a beautifully defined structure.
The coffee comes from Ethiopia, specifically the Yirgacheffe and Gedeb regions, and is sourced from the Halo Beriti processing station. More than 1,000 small-scale farmers, who primarily cultivate their crops on smaller family plots, supply coffee cherries to the station. The coffee trees grow at high altitudes ranging from 1,920 to 2,230 meters, often in the shade of native Birbira and Acacia trees. The station is operated by Boledu Coffee, a company founded in 2017 by Abeyot Agez and Mebrahtu Aynalem. The entire origin is built on the connection between small-scale growers, high altitude, and an environment where coffee is grown alongside other crops such as enset, avocado, soybeans, and sugarcane.
Processing is done using the washed method. Farmers hand-pick only ripe cherries, which are sorted and pulped upon arrival at the station. The coffee is then fermented in water tanks for 48 to 72 hours, depending on the ambient temperature. After fermentation, the parchment is thoroughly washed and often briefly soaked in clean water. Drying takes place on raised African beds for 10 to 12 days, until the coffee reaches the desired moisture content. After drying, the coffee rests in its parchment, then is sorted, cleaned, and prepared for export.
