The beans come from the Guji Kercha washing station in Banko Michicha village, located in the Kercha region of the Guji zone, one of the most famous Oromia regions in Ethiopia. This station works with about 150 small farmers who grow indigenous varieties such as Heirloom, Kurume, Wolisho and Dega at altitudes of up to 2050 m above sea level. Thanks to the ideal climate, fertile soil and the farmers' meticulous handiwork, the microlots produced are of the highest quality, known as Grade 1.
The processing of this coffee follows the so-called Wine Process, which is inspired by techniques from the wine industry. The coffee cherries are fermented whole - including the skin - in vacuum-sealed, temperature-controlled stainless steel tanks with a CO₂ release valve. Thanks to the limited access to oxygen and the extended fermentation time, intense aromaticity, subtle sweetness and complex flavour layers develop, which distinguish this coffee from the usual naturally processed batches.
